Kitchen Favorite: Avocado and Corn Salsa

Need something you can whip up quick for your Superbowl party? This salsa is fast, delicious, and you probably have all the ingredients already anyway. My husband and I are known for bringing it to parties, but it always gets eaten – QUICK.

What you need:

2 ripe avocados

2 large firm tomatoes

1 medium white onion or yellow onion

1 or 2 cans of whole kernel corn, rinsed

1 or 2 cans of black beans, rinsed

2-3 limes

Some cilantro

Salt and pepper, to taste

What you do:

In a large bowl (really large if you used two cans of corn and beans), pour in the rinsed corn and black beans. Chop tomatoes, onion and avocados into small cubes – I like my salsa chunky, but you could make the pieces as small as you want. Add these to your bowl and gently mix.

Zest both limes into the bowl, then slice up the lime and squeeze juice over your salsa mixture. Stir it in so all that juice covers your ingredients. Add salt, pepper, and finely chopped cilantro. Give another gentle mix and taste! Add more salt or lime juice if you feel it’s lacking, or spice it up with some jalapeno.

That’s it! I think it serves best with Tostitos Hint of Lime chips. But I just love those things.
